** Hot Pepper Poppers **
6 small jalapeno peppers
1 cup grated Chihuahua cheese
1/4 cup tortilla Crumbs
3 tablespoons olive oil, salt and pepper

1. Preheat oven to 400 degrees.
2. Slive each pepper lengthwise.
Completely remove all membranes and seeds.
Be sure to wear rubber gloves.
3. Place peppers in a colander and wash with cold water. Drain.
4. Place peppers in a small bowl and toss with 2 tablespoons of olive oil.
5. Place pepper half on a small baking sheet. Sprinkle with salt and Freshly ground pepper.
6. Stuff each pepper with grated cheese.
7. Combine Tortilla Crumbs with 1 tablespoon olive oil.
Sprinkle onto each stuffed pepper.
8. Bake for 7-10 minutes in preheated oven.
Cool slightly before serving.
